The best pancakes

We always wanted to find a recipe for tall, fluffy and full proof pancakes. This is it. In only 8 days, we already made it 3 times!!! It is so easy, so good! The original is here . The quantities will give a nice breakfast for 2 people. In a mixing bowl, whisk together  30 g of room temperature butter (or melt it slightly in the microwave) and 25 g of sugar . Whisk in 1 egg , 1/4 teaspoon of vanilla extract, 1/2 cup nature flavored yogurt (or vanilla, then omit the vanilla extract), 2 tablespoon of milk (only if using 2% or more for the yogurt, if using leaner version, you an skip the milk), 1/4 teaspoon salt and 1/2 teaspoon baking soda. Add 130 g of flour and mix gently in. *** The texture should be quite stiff, ie non-liquid. If it spread in the pan when you spoon it, it is too runny!!! Chocolate chip yogurt muffins

Most of you know that we love to impress each other at breakfast on weekends. This last weekend was not any different than any other. ;) Here is a nice recipe that we use to make at my Mom's place. The topping makes it very nice and crunchy. Preheat the oven at 190C and butter a 12 muffins tray. In a bowl, mix 250 ml of yogurt and a teaspoon of baking soda . Put aside. The volume will at least double, so consider this when you choose your bowl ;). In another bowl, beat 125 ml of butter and add 250 ml of sugar , beating continuously. Add 2 eggs , one at a time and 1 teaspoon of vanilla extract . Mix well. In a big bowl, mix 500 ml of flour , half a teaspoon of baking powder and 200 ml of chocolate chips . Add the two wet mix to the dry ingredients and mix just enough so it's more or less homogeneous (do not beat it!). Pour the mix in the muffin tins. Braided Cardamom Bread

It's one of my Swedish favorites. I discovered it a couple of years ago when I was here for the first time, and I fell in love with it. Being a non-cardamom fan myself, it took quite a particular twist to bring me to that state! Here, you can use your favorite recipe for a sweet bun's dough, or the following (it needs to be a sweet enough dough. I found the recipe here . In a bowl, mix together 300 ml of lukewarm milk , 175 ml of melted butter (or oil) and 175 ml of white sugar .  In another small bowl, mix a liter of flour with 1.5 tablespoon of instant yeast and 1 teaspoon of cardamom (I put 1.5 to 2!) . Gradually incorporate the dry mix to the wet one, mixing vigorously at the same time. At some point, you will have to use your hands to continue the job. Knead the dough for 5-10 minutes, or until soft and elastic. Divide the dough in 3 equal parts and let them rise in a warm place for 30 to 45 minutes. Crazy cinnamon buns with hot caramel glaze

Yes! It's us... We are back!!! The last few weeks have been crazy. We have been cooking delicious stuff of course but had not time whatsoever to put the recipes on the blog, unfortunately. I did that recipe for André one of those not so nice gray morning. Fortunately for us, good food always makes us smile and enjoy the day. :) Once again (and I can assure you that this is not the last time!), I took the recipe from Ricardo's website and adapted it a little bit with what we had in our fridge/pantry. In particular, pecan nuts are not that easy to find in Sweden (don't even get me started on the chocolate chips... Sweet French toast with marmalade sauce

Yesteray morning we were both checking for recipes. Sophie had her first go. I found one in an app I downloaded a long time ago. It's a Jamie Oliver cook book app. Extremely neat with a lot of features a real book will never have: Step-by-step description (with pictures), some steps with helpful videos linked, shopping list export, search, and so on. I hope there will come more like this, if so, I'll never buy another real book ;) But, of course, it wouldn't be me, if I won't vary the recipe. So here is my solution: I used 1.5 big Ciabatta buns (maybe a little too much) and cut it in quarters. I mixed 1 egg , 1 vanilla pod and 30ml of cream (matläggningsgrädde ;) ) and a teaspoon of sugar and let the chiabatta soak for a few minutes from all sites. Instead of Seville marmalade (I guessed it's orange marmalade) I used two table spoons breakfast mix marmalade (apricot, orange,...) we bought once for camping.
