Party cake 2 : carrot cake with cream cheese icing

This is an all time favorite. I have made this cake many, many times and it was always appreciated. Also, one can easily replace the flour with gluten free flour and it will be just as good! This recipe is actually a family recipe. I remember the first time I tasted it, I was 8 or 9, my step mom made if for either my birthday or my sister's birthday. That time, she had some plastic figurines on top. She made this every year and was always putting money (coins) in the cake: she knew where she put the bigger coins and always manage that the "birthday girl" would have the coin with the most value in her piece of cake... Bref, a good cake: a perfect cake! 

Initially, the cake is meant to be prepared in a torus/donut form but I also prepared it in a regular spring form, cut it and iced in between the 2 pieces. For André's dissertation, I prepared it in a 38cm x 34cm pan. It was not extremely thick, so you might want to prepare it in a smaller pan, but then you will have to scale the cooking time up.

Cake

Heat the oven to 190C, grease the form.

In a big bow, add 500ml of flour, 500ml of sugar, half a teaspoon of salt, 2 teaspoons of baking powder (or baking soda, sorry, I gets a little complicated in Sweden with this...), 2 teaspoons of cinnamon and 1 teaspoon of all spice. Mix well. Add 250ml of oil and mix well. Add 4 eggs, one at a time, making sure to mix well between each. Grate 3 cups of carrot (you can use your electrical food cutter for this if you have one) and add to the batter, mix well. Pour into the form and cook until a knife comes out clean when insert in the dough. If making a thin cake (or muffins), it will take around 25 minutes, if you make a full cake, it could take the double (50 minutes).

Icing

As for the brownie, you want to put out the butter and the cream cheese on the counter. Whisking them together now will be very difficult if they are too cold, so you should try to have them at room temperature before you start (or put them in the microwave at low power before you start).

Whisk (you will want an electric whisk for this) 125g of cream cheese with 60g of butter. Whisk in a teaspoon of vanillaAdd 2 cups of icing sugar, a little a a time and whisk in before adding more. Trust yourself: if you want your icing more firm, you might want to add more, if you want it more runny, add less. Spread on the brownie, cut in "small" pieces and enjoy!
